Introducing Lynsey Harley

Who are Modern Standard Coffee?

Established in 2015 by founder Lynsey Harley, Modern Standard is one of the few female founded & run coffee businesses in the UK. They are multi-award-winning & the first UK roastery to sign up to 1% For The Planet putting people and planet before profit.

Where are they based?

Lynsey’s home town of Glenrothes in a 15,000sqft roastery complete with secret garden! There’s also a café in Brunstfield, Edinburgh & coffee studio close to London’s Borough Market.

What’s their message?

To de-mystify coffee for everyone by offering ethically sourced, direct trade speciality coffees at scale. By working directly with the worlds’ leading farmers, paying them a fair price then roasting and packing everything in Glenrothes, Modern Standard Coffee is able to supply uncompromising quality at an affordable price for everyone.

What do we love about Modern Standard?

They love what they do (and they’re really good at it)! A small yet skilled team make it happen with Lynsey at the helm & Lee heading up sales. In the roastery, Caitlin heads up production & customer service with Susan, Reece & Daisy. Zak is in charge of roasting a tonne of beans a day with Calum’s help and Sarah oversees all things finance…oh and the secret garden!

…Secret Garden?

Tucked away at the back of the roastery, it’s a tranquil indoor & outdoor space for staff relax or host the occasional meeting. It’s also a haven for wildlife, complete with veg patch, wild flowers & bee hives (yes – bee hives!).

Who should be talking to Lee about all things coffee?

Any business serious about offering great coffee without compromise – whatever the size!
Conference venues, universities, tourist attractions, independent cafes, retailers, farm shops, garden centres – the list goes on.

Where can the public buy Modern Standard coffee?

Balgove Larder, Bowhouse, Ardross Farm Shop, No 16 Aberdour, The Stables (Falkand Estate) to name but a few outlets. Online, of course, or head to the roastery in Glenrothes or their café on Barclay Terrace, Bruntsfield.

Where can retailers get a supply of shelf ready pouches?

Are there any useful bi-products from coffee roasting?

YES! Chaff is a natural (non-edible) protective coating which the beans shed during roasting. It has several eco-friendly uses including outdoor animal bedding & garden compost and can be mixed with sawdust & compressed to make briquettes.

Coffee sacks, often made out of hessian have endless possibilities for recycling – think cushions, ceiling linings, stool covers – you can even plant tomatoes in them!

Both are available on-going to Food from Fife members free of charge (collection only).
